How do I get my keyboard to run at 1000Hz?

Nonsense, polling rate detects changes on the matrix.  Holding a key forever is one event, you're not inputting 100 or 125 events in a second on a single key.

The site you mentioned just like this site https://joltfly.com/keyboard-scan-rate-test/, gives you the scan rate of your keyboard keys, the polling rate of your hardware purely depends upon its specifications so you cant really do much about it, you can tweak it via system settings but cant really make it work faster than its capacity. If you want your keyboard to have enormous polling rate try investing in some modern gaming keyboards optimized for this purpose.
